Kancor’s breakthrough innovation in anti-oxidants

Oxidation is a common, yet undesirable chemical change that affects flavour, aroma, texture and nutritional quality of food, beverages and edible oils. Anti-oxidants help counter this problem by delaying the process of oxidation.

 

There are a number of anti-oxidants available in the market; synthetic ones being the most commonly used. However, recent studies question the safety of using synthetic anti-oxidants such as BHT, BHA and TBHQ, with research clearly pointing to the fact that these can be detrimental to human health. This has led to a rapid change in preferences, with consumers increasingly choosing natural products over synthetic ones. Most synthetic anti-oxidants have also been banned in many countries owing to health concerns.

 

Kancor’s expert team of scientists developed OxiKan range, while trying to come up with a shelf life enhancement solution for a customer’s meat product. Extracted from the finest rosemary, OxiKan is a range of natural anti-oxidants that extend shelf life the natural way,. In-house research has identified three main principles in rosemary – carnosic acid, carnosol and rosemarinic acid that inhibit the oxidation of other molecules by being oxidized themselves. This helps in extending the shelf life of the product by fighting rancidity in oils and fats, and stabilising natural flavours and colours.

 

Rosemary extracts, when used as an anti-oxidant, imparts flavour, aroma and colour to the end application.
